For many Chardonnay lovers, just hearing the word ‘Limoux’ makes their mouths water in anticipation. This southern French appellation is home to seriously fine sparklers (Crémant de Limoux) and some of the world’s best Chardonnay, many of which can rival the top bottles from Burgundy.

You’ll taste for yourself with hugely popular La Voûte. Winemaker Mark Hoddy sourced premium grapes from the Astruc vineyard in Limoux Océanique. Here, vines planted almost 1,000 feet up soak in brilliant sunshine and chilly breezes, a combination that locks in ripeness, aromatic intensity and greater depth of flavor. Back at Mark’s ‘workshop’ in Bordeaux (Le Chai au Quai), he fermented the juice in new oak barrels—a further eight months resting in barrel rounded out all the pure fruit flavors.

Gilbert & Gaillard awarded it a double-gold medal and 91 points, writing: “Bright pale gold color. Discreet but elegant nose, mixing citrus fruits, mineral dimension and a touch of boxwood. The ample, fleshy, concentrated palate, framed by a lovely verve, is very charming, ending with ginger and greengage. Delicious.”

Serve in large glasses in order to release the aroma, then pair with chicken (roasted or drizzled with a creamy, lemony sauce) or grilled turbot.

La Voûte

Château de Dracy is a fine white Burgundy from the noble (and highly praised) house of Albert Bichot and the high-quality 2020 vintage. Boasting layers of citrus and apple, plus subtle toasty oak, it’s a fine Chardonnay for a family dinner.

In the last few years, the noble house of Albert Bichot has won much praise for its fine red and white Burgundies—challenging famous rivals for quality, and winning hands-down on price. They’ve won their share of “Producer of the Year” awards from important international shows and The Wine Advocate writes that “they are making extremely fine wines.”

So, you can imagine our excitement when they sent a small allocation from one of their top properties and the superb 2020 vintage, called “an exceptional Burgundy vintage” by Decanter. 

Château de Dracy traces its history all the way back to 1298—the estate’s vineyards are a Monopole—fully controlled by the château (rare in Burgundy) and lie in the Côte de Beaune town of Couches. Amazingly, the estate has collaborated with Albert Bichot for the last 110 years(!). 

What should you expect in the glass? Classic Chardonnay, only as Burgundy can do it: Look for layers of pure, nervy citrus and Golden Delicious apples, flecked with subtle flinty notes and a hint of toasty oak on the long, complex, refreshing finish. This is a classy dinner white that will pair well with seafood and white meat dishes—though it’s equally delicious on its own.

California’s Mendocino County is “just the place for those who like to venture off the path,” says Wine Spectator. This bucolic destination is a haven for quality-conscious, family-owned vineyards and is well-worth the road trip if you’re ever in the area. But if a wine country drive isn’t in the cards, fear not. Fine Form was crafted for you by Dawn and Toby Forman, who both come from renowned winemaking families (Toby’s dad is Napa legend Ric Forman and Dawn’s family have been growing grapes for generations). The couple is famous in their own right for their rich Cabernet and Chardonnay, and thanks to the great 2020 vintage, this fresh release is one of the best wines we’ve tasted from them.

Like all their wines, this release was made with the utmost care. The fruit was hand-picked and hand-sorted, then the wine was aged in fine French oak for a year. The aromas of crisp apple, ripe melon, and fresh-cut pear are framed by nutty nuance and they all continue onto the marvelously smooth, seriously fresh palate. It’s wonderful on its own and delicious with farmhouse chicken, lobster, and Oregon-favorite wood-plank salmon.
