This thrilling arrival comes from Gaillac in the Comté Tolosan region, one of Europe’s earliest centers of winemaking and one of the first areas in France to adopt viticulture. (Courtesy of the Romans, who planted vineyards as they expanded through the continent.) While the region has faced many challenges—from punishing, medieval-era taxes to the Phylloxera bug decimating vineyards in the late 1800s—it’s making a valiant comeback with wines like this one.
The vineyards for Croix Sant Salvy are HVE3 certified, meeting France’s top environmental standards. There’s a special focus on biodiversity (which leads to healthier vines) and conserving water. Gaillac’s vineyards also benefit from warm Mediterranean sun balanced by Atlantic breezes, and winemaker Jean-Noel Barrau brings it all to life in this bottle.
