Talented winemaker Nicole McPheeters (below) is a real rising star, with a Master of Viticulture & Enology from the University of Adelaide’s Roseworthy Campus. Nicole selected the beautifully ripe Cab grapes from a vineyard overlooking the river Tarn. The river’s moderating influence helped the grapes retain freshness, while the sunny Mediterranean climate aided in the development of intense fruit flavors.

Back in the winery, Nicole treated the Cab to a full year in oak barrels, imparting toasty spice to the ripe cherry, blackberry and savory herb notes. For the final touch, Nicole named the wine Prestige de Mireval (Mireval meaning ‘one who overlooks the valley’ in the Occitan dialect) after its beautiful homeland.
