The Wine

William “Bill” Knuttel made a name for himself at famous estates Saintsbury and Chalk Hill, two of California’s top wineries, before branching out on his own. We’ve worked closely with Bill for years and are proud to offer his brand-new Touché Cabernet Sauvignon. The name is a nod to the precision and craftsmanship (akin to an expert fencer) that Bill brings to every wine.

Since Bill has relationships with top growers across California, he always has pick of premium fruit. For this award-winning release, he sourced perfectly ripened Cabernet Sauvignon grapes from Dry Creek Valley, one of Sonoma’s most prized sub-regions. Dry Creek Valley is known for producing exceptional-quality Cab, and thanks to the great 2021 growing season, that’s exactly what Bill and to work with.

Back in the winery, he treated the Cab to 14 months in American oak barrels, which imparted notes of cocoa powder, vanilla and vibrant spice to the Cabernet’s naturally exuberant black fruit and dark berry flavors. After tasting Touché, our California wine expert recommends pairing it with strip steak, potato strata, creamy blue cheese polenta or even blackberry cobbler.
