Touché William Knuttel Cabernet Sauvignon Reserve 2021

William “Bill” Knuttel made a name for himself at famous estates Saintsbury and Chalk Hill, two of California’s top wineries, before branching out on his own. We’ve worked closely with Bill for years and are proud to offer his brand-new Touché Cabernet Sauvignon Reserve. The name is a nod to the precision and craftsmanship (akin to an expert fencer) that Bill brings to every wine.

For his first-ever private Reserve, Bill spared no expense. He sourced pristine Cabernet Sauvignon grapes from Napa Valley’s incredible Sage Canyon Vineyard and the superb 2021 vintage. Characterized by calm weather, low rainfall and a surprisingly early harvest, 2021 was one of the last decade’s best growing seasons, producing low yields of high-quality grapes.

Back in the winery, Bill treated the Cab to 16 months in his finest French oak barrels. The resulting wine is beautifully structured and elegant, with exuberant black fruit and spice flavors. Judges at the San Francisco International Wine Competition loved it so much, they awarded it a gold medal.

After tasting Touché, our California expert recommends pairing it with braised short ribs or a portobello mushroom burger, with a side of roasted broccolini and chocolate lava cake for dessert.
